FOR THE CHICKEN
💍 1kg chicken breasts, sliced lengthways
💍 1 tsp smoked paprika
💍 1 tsp garlic powder
💍 1 tsp onion powder
💍 ½ tsp dried oregano
💍 1 tsp salt
💍 ½ tsp white pepper
💍 1 tbsp olive oil
💍 2 tbsp oil from the jar of sundried tomatoes
Place the chicken in a large bowl. Add the olive oil and all the spices. Gently massage until the chicken is evenly coated.
Heat the sundried tomato oil in a large frying pan over medium-high heat. Cook the chicken in batches (don’t overcrowd the pan) and sear for 4 minutes on each side until golden. Transfer to a plate and set aside.
FOR THE SAUCE
💍 2 tbsp butter
💍 4 garlic cloves, finely chopped
💍 1 heaped tbsp tomato paste
💍 1 cup thickened cream
💍 ½ cup chicken stock
💍 ¼ cup sundried tomato strips, drained and sliced
💍 ¼ cup grated Parmesan
💍 1 tsp honey
💍 1 tsp dried basil
💍 Squeeze of fresh lemon juice
METHOD
Heat the butter in the same pan. Add the garlic and cook for 1 minute until fragrant.
Add the sundried tomatoes, tomato paste and dried basil. Stir and cook for another minute.
Pour in the chicken stock, scraping up all the flavour from the bottom of the pan.
Add the thickened cream, Parmesan, honey and lemon juice. Stir well and bring to a gentle boil.
Return the chicken and any resting juices to the pan. Bring back to a gentle boil, then cover and reduce the heat to low. Simmer for 10 minutes.
Turn off the heat and let the chicken rest for 5 minutes before serving.
TO SERVE
Serve over a bed of creamy mashed potatoes and finish with extra Parmesan and fresh basil if desired..
