BERRYLICIOUS CHEESECAKE

BISCUIT BASE

• 250g plain digestive biscuits
• 90g unsalted butter, melted
Preheat oven to 160°C (fan-forced). Line the base of a 22cm springform tin with baking paper. Crush the biscuits into fine crumbs and mix with melted butter. Press firmly into the base of the tin. Refrigerate while preparing the filling.
CHEESECAKE FILLING

🫐 750g cream cheese, room temperature
🫐 200g caster sugar
🫐 3 eggs
🫐 200g sour cream
🫐 2 tsp vanilla extract
🫐 2 tbsp cornflour
🫐 1 tbsp lemon juice
🫐 Pinch of salt
Beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing gently until just combined. Add the sour cream, vanilla, cornflour, lemon juice and salt. Mix until smooth. Pour the filling over the chilled biscuit base. Bake for 55–65 minutes until the edges are set but the centre still has a slight wobble. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
Remove and cool completely. Refrigerate for at least 6 hours, preferably overnight.
RICH BERRY SAUCE

🫐 500g mixed berries (fresh or frozen)
🫐 100g caster sugar
🫐 2 tbsp lemon juice
🫐 1 tsp vanilla extract
🫐 1 tbsp cornflour dissolved in 2 tbsp water
Add the berries, sugar, lemon juice and vanilla to a saucepan over medium heat. Cook for 8–10 minutes until the berries break down and become syrupy. Add the cornflour mixture and stir. Cook for 1–2 minutes until thickened. Cool completely before spooning over the cheesecake. Remove the cheesecake from the springform tin. Spoon the rich berry sauce generously over the top. Decorate as desired.
