COPYCAT EL JANNAH FEAST

• 1 whole chicken, keel bone removed and butterflied
Clean and pat chicken dry. Place in a large bowl and set aside.
MARINADE

• ¼ cup olive oil
• ¼ cup fresh lemon juice
• 2 tbsp white vinegar
• 8 garlic cloves, crushed into a paste
• 2 tsp salt
• 2 tsp sweet paprika
• 1 tsp ground cumin
• 1 tsp ground coriander
• ½ tsp ground cinnamon
• ½ tsp ground turmeric
• 1 tsp black pepper
Combine everything together in a jar then pour over chicken. Massage by hand then cover and refrigerate overnight. Remove from fridge 1 hour prior to cooking to bring to room temperature.
BASTING SPRAY

• ½ cup water
• ¼ cup lemon juice
• 2 tbsp white vinegar
• 1 tsp salt
Mix everything together in a spray bottle. Spray chicken on each side right before turning. Heat charcoal. Place chicken in a wire rack and cook skin side down first. Turn every 5-10 minutes to prevent burning. After the first few turns start spraying with the basting spray. Cook slow and steady for 50-60 minutes or until cooked through. Let it rest for 10 minutes before serving.
Serve with hot chips, tabouleh, toum (garlic dip), pickles and fresh Lebanese bread.
