SLOW COOKED LAMB SHANKS

• 4 lamb shanks, French trimmed
• 3 tbsp olive oil
• 2 large brown onions, sliced
• 4 cloves garlic, crushed
• 2 tbsp tomato paste
• 2 tbsp Worcestershire sauce
• 1 tbsp soy sauce
• 2 tsp smoked paprika
• 2 tsp ground cumin
• 2 tsp dried thyme
• 1 tsp ground allspice
• 2 bay leaves
• 2 tsp salt
• 1 tsp black pepper
• 4 cups beef stock
• 1 cup water
• 2 tbsp plain flour
• 2 tbsp butter
Pat the lamb shanks dry and season generously with salt and pepper. Heat olive oil in a large heavy-based pot over medium-high heat. Brown the lamb shanks on all sides until deeply golden. Remove and set aside. Reduce the heat to medium. Add the onions and cook for 8–10 minutes until softened and lightly caramelised. Add the garlic and cook for 30 seconds until fragrant. Add the tomato paste, smoked paprika, cumin, thyme and allspice. Cook for 1–2 minutes to release the flavours.
Add the Worcestershire sauce and soy sauce, then return the lamb shanks to the pot. Pour in the beef stock and water. Add the bay leaves and bring to a gentle simmer.
Cover with a lid and reduce the heat to low. Cook for 2 1/2 - 3 hours, turning the lamb shanks occasionally, until the meat is tender and falling away from the bone.
Carefully remove the lamb shanks and set aside. Pour stock through a strainer breaking up the onions with the back of a spoon. In the same pot melt the butter then add the flour. Cook for 1 minute before gradually add the strained stock. Bring to a boil and simmer uncovered on high for 10 - 15 minutes or until reduced and thickened. Taste and adjust seasoning if needed. flour together to make a smooth paste. Return the lamb shanks to the gravy and spoon the sauce over the top before serving.
