QUICK PHO BROTH

๐ซ 1 tbsp vegetable oil
๐ซ 1 brown onion, halved
๐ซ 5cm piece fresh ginger, halved lengthways
๐ซ 2 garlic cloves, smashed
๐ซ 2 star anise
๐ซ 1 cinnamon stick
๐ซ 3 whole cloves
๐ซ 1 tsp coriander seeds
๐ซ 1 litre chicken stock
๐ซ 500ml water
๐ซ 2 tbsp fish sauce
๐ซ 1 tbsp light soy sauce
๐ซ 2 tsp brown sugar
EVERYTHING ELSE
๐ฟ 500g chicken breast, cooked and shredded
๐ฟ 200g flat rice noodles, cooked
๐ฟ 1 tsp sesame oil
๐ฟ bean sprouts
๐ฟ coriander
๐ฟ spring onions
๐ฟ lime
๐ฟ Thai basil
๐ฟ chilli oil
Heat oil in a hot pot. Add onion and ginger cut-side down. Cook for 2-4 minutes or until nicely charred. Now add garlic, star anise, cinnamon, cloves and coriander seeds. Stir and cook for 1 minute. Add chicken stock and water. Bring to a boil. Cover and reduce heat to low. Simmer for 10-15 minutes before adding sesame oil. Meanwhile cook your noodles to packs instructions. Strain aromatics from broth. Build your bowl by placing drained noodles in first followed by the shredded chicken. Ladle in the broth then top with remaining ingredients.

** Use your leftover cooked chicken for this recipe OR place 1 large chicken breast in a pot. Season with salt and white pepper. Cover with water and bring to a boil. Cover and reduce heat to low. Simmer for 20 minutes. Remove breast and set aside to cool before shredding. Use liquid in the Pho recipe.
