BAKED FISH FILLETS WITH LEMON CREAM SAUCE

🐟4 white fish fillets (800g–1kg), such as barramundi, snapper, basa or hoki
🐟 1 tsp salt
🐟 1 tsp paprika
🐟 1 tsp garlic powder
🐟 1/2 tsp black pepper
🐟 1 tbsp olive oil
LEMON CREAM SAUCE
• 40g unsalted butter
• 4 cloves garlic, minced
• 1 cup thickened cream
• 1/2 cup chicken stock
• 1/2 cup grated parmesan cheese
• 2 tbsp lemon juice
• 1 tsp dried oregano
• 2 tbsp chopped fresh parsley
Preheat oven to 200°C. Pat the fish fillets dry with paper towel and place in a lightly greased baking dish. Season the fish with olive oil, salt, pepper, paprika and garlic powder. Set aside. Melt the butter in a small saucepan over medium heat. Add the garlic and cook for 30 seconds until fragrant. Add the cream, chicken stock, parmesan, lemon juice and oregano. Stir until combined and gently simmer for 2–3 minutes until slightly thickened. Pour the lemon cream sauce around the fish fillets. Bake uncovered for 15–20 minutes, depending on the thickness of the fish, until the fish flakes easily with a fork. Sprinkle with fresh parsley and serve immediately.
