BUTTER CHICKEN
CHICKEN MARINADE
• 1kg chicken thighs, diced
• 1 cup Greek yoghurt
• 2 tsp garam masala
• 1 tsp cumin
• 1 tsp paprika
• 1 tsp turmeric
• 1 tsp salt
• 1 tsp kasuri methi (dried fenugreek leaves)
• 1/8 tsp red food colour powder
• 1 tbsp ginger garlic paste
• Juice of ½ lemon
Mix everything together in a bowl, cover and refrigerate for several hours. Remove from fridge 1 hour prior to cooking to bring close to room temperature.
Place chicken in a shallow pan and cook under the grill on high heat for 10-14 minutes on each side or until small char marks form all over. Remove and set aside.
BUTTER CHICKEN SAUCE
• 3 tbsp butter
• 1 onion, finely diced
• 1 Tbsp ginger garlic paste in
• 2 tbsp tomato paste
• 400g crushed tomatoes
• 1½ tsp garam masala
• 1 tsp paprika
• 1 tsp ground cumin
• ½ tsp turmeric
• 1/2 tsp chilli powder
• 1 tsp sugar
• 1 cup thickened cream
• ½ cup coconut cream (optional, for extra richness)
• 1 tsp salt
Heat butter in a hot pot. Add onion and sauté until soft. Add ginger garlic paste and cook for 1 minute. Add garam masala, paprika, cumin, turmeric, chilli powder and tomato paste and stir. Add tomatoes, cream, coconut cream, sugar and salt and bring to a boil. Cover and reduce heat to low. Simmer for 20 minutes. Blitz everything with a stick blender and blend until smooth. Add the chicken along with pan juices and bring back to a boil. Cover and reduce heat to low. Simmer for 40 minutes for soft and tender chicken.
Serve with basmati rice, naan and freshly chopped coriander.
