CURRIED SAUSAGES
🥕 1 tbsp oil
🥕 8 thick beef or chicken sausages
🥕 1 large onion, sliced
🥕 3 garlic cloves, crushed
🥕 1 tbsp mild curry powder
🥕 1 tsp turmeric
🥕 1 tsp paprika
🥕 2 tbsp tomato paste
🥕 2 cups chicken stock
🥕 1 cup cream
🥕 1 carrot, sliced
🥕 1/2 cup frozen peas
🥕 1 tbsp Worcestershire sauce
🥕 1 1/2 tsp salt
🥕 1/4 tsp pepper
🥕 Fresh parsley to garnish
Heat oil in a large pan. Add sausages and cook until brown on all sides. Remove and set aside. Add onion and cook for a few minutes before adding garlic. Cook for 1 minute then add curry powder, turmeric and paprika. Stir. Add tomato paste, stir and cook for 1 minute. Add chicken stock and bring to a boil. Add cream, carrots, peas, Worcestershire sauce,salt and pepper. Slice sausages into bite-sized pieces and add to the curry. Bring to a boil, cover and reduce heat to low. Simmer for 10 minutes.
MASHED POTATOES
🥔 1.2kg brushed potatoes, peeled and quartered
🥔 60g unsalted butter
🥔 1/2 cup cream
🥔 1 tsp + 1 1/4 tsp salt
🥔 1/8 tsp white pepper
Add potatoes to a medium pot and cover with water. Add 1 tsp of salt. Bring to a boil, cover and reduce heat to low. Simmer for 25 minutes then drain. Add potatoes back to the pot along with remaining salt and pepper. Mash. Now add butter and cream and mash again.

** I like to cook the sausages in the airfryer for 14 minutes this way any excess fat drains and gets left behind.
