SALSA


πŸ… 2 tomatoes, seeds removed, finely diced 

πŸ… 1/2 red onion, finely diced 

πŸ… handful fresh coriander, finely chopped 

πŸ… 1/4 tsp salt

πŸ… juice of 1/2 lime


Mix everything together and set aside


GUACAMOLE

πŸ₯‘ 2 avocados, mashed

πŸ₯‘ 1/2 red onion, finely diced

πŸ₯‘ handful fresh coriander, finely chopped 

πŸ₯‘ 1 garlic clove, minced

πŸ₯‘ 1/2 tsp salt

πŸ₯‘ juice of 1/2 lime


Mix everything together and set aside.


BEEF

🫘 1 Tbsp oil

🫘 1 onion, finely chopped 

🫘 3 garlic cloves, minced

🫘 500g beef mince

🫘 1 1/2 tsp salt

🫘 1 tsp paprika, cumin, oregano, chilli

🫘 1/2 tsp smoked paprika 

🫘 1/4 tsp black pepper 

🫘 2 Tbsp tomato paste

🫘 420g tin black beans, drained

🫘 454g tin refried beans

🫘 1 cup beef stock


Heat oil in a hot pan. Add onions and sautΓ© until soft. Add garlic and cook for a minute. Add mince and break up with a fork. Add spices and cook until no longer pink. Add tomato paste and stir. Add black beans, refried beans and beef stock. Being to a gentle boil. Lower heat and simmer for 5 minutes. Set aside. 


EVERYTHING ELSE


• 2x 175g salted corn chips

• Mexican blend cheese

• corn kernels

• sliced black olives

• pickled jalapeΓ±os

• sour cream


Preheat oven to 190°C (fan). Place corn chips on a large tray and cook in the oven for 10 minutes. Top with meat mixture and cheese then place under the grill for 10 minutes. Top with corn, olives, jalapeΓ±os, salsa, guacamole and sour cream.
